Kochen Mit Radau!

 

So I finally got a recipe from my friend Volker Radau in Germany! He's always making something amazing for his family. He was kind enough to not only share this recipe with me, but took the time to translate it from German to English. (My German was better once upon a time when i lived there....but i was like...16.) So that was very much appreciated.

For 3 people: 

350 grams of pasta 

Salt 

pepper 

chili powder 

1 onion 

600 g chicken fillet 

2 tablespoons oil 

1 tbsp tomato paste 

2 cans (425 ml each) diced tomatoes 

125 g fresh goat cheese 

2-3 rosemary 

150g ciabatta 

250 grams of mozzarella 

2 tbsp butter 

Step 1: Cook the noodles in 3-4 liters of boiling salted water (approx. 1 teaspoon of salt per litre) according to the instructions on the packet. Meanwhile, peel and finely dice the onion. Wash the meat, pat dry and cut into strips. 

Step 2: Heat oil in a pan. Sear the chicken vigorously all over. Fry the onion briefly. Season generously with salt, pepper and chilli powder. Add the tomato paste and sauté briefly. Deglaze with the diced tomatoes. 

 Step 3: Bring everything to the boil and simmer for about 5 minutes over medium heat. Stir in the goat cheese. 

Step 4: Preheat the oven (electric stove: 200 °C/convection: 175 °C/gas: see manufacturer). Wash the rosemary, pat dry, pluck off the needles and chop roughly. Finely dice the bread. Cut the mozzarella into thin slices. 

 Step 5: Drain the noodles well and return them to the pot. Mix with the chicken and tomato sauce and pour into a casserole dish. Scatter the mozzarella over the casserole. Scatter rosemary and bread cubes on top. 

Step 6: Place knobs of butter on top. Bake in the hot oven for 15-18 minutes.
