My Bad Ass Meatloaf!

 


Ingredients

  • 2 lbs ground beef (90% lean)
  • 2 tbsp fresh green onions (diced)
  • 2 eggs
  • 2 tbsp garlic cloves (minced)
  • 4 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 4 tbsp fresh parsley (finely chopped)
  • 3/4 cup panko breadcrumbs
  • 1/2 cup milk
  • 2 tsp Italian seasoning
  • 1/2 tsp smoked paprika
  • 2 tsp salt
  • 1/2 tsp black pepper 

 


Meatloaf Sauce

  • 1 cup ketchup
  • 2 tsp white vinegar
  • 2 tbsp brown sugar
  • 2 tsp garlic powder
  • 1 1/2 tsp onion powder
  • 1/2 tsp salt (to taste)
  • 1/2 tsp pepper (to taste)

Instructions 

  • Preheat oven to 375 F.

  • Spray a loaf plan with nonstick spray and set aside.

  • In a large mixing bowl, combine ground beef, onion, eggs, garlic, ketchup, Worchestershire sauce, parsley, breadcrumbs, milk, Italian seasoning, smoked paprika, salt and black pepper. Mix until well combined.

  • Place meatloaf mixture into prepared loaf pan. Bake at 375 F for 40 minutes.

  • Start preparing the meatloaf sauce. In a small mixing bowl, mix ketchup, white vinegar, brown sugar, garlic powder, onion powder, salt, and black pepper. Whisk until ingredients are well combined. Spread the meatloaf glaze on top when it has 15 minutes left to bake.

  • Let the meatloaf rest for 5 minutes. Top with fresh parsley and enjoy!






     This was my very first time making a meatloaf. I used a recipe my mom sent me and changed it up a little bit. The only thing i really changed was substituting a large white chopped onion for small chopped green onions from my little garden. I am not a fan of large onions in meat and i think that's why i avoided meatloaf as a child. 

    One thing i love about cooking now is i can revisit all of those dishes from my past that i would think..."this would be SO GOOD if it didn't have (blank) in it." For me that could mean anything from cheese to mushrooms to cilantro to any white sauce at all. 

    These days i cook how i want. And THIS meatloaf is not only amazing, but good for those who have texture issues and strange food avoidances like me. You can eat this without picking anything out!
