I don't do a lot of deep fried dishes due to some health concerns but when i do....omg it is amazing. I found this quick and easy recipe for the batter online. It can be altered and used for any kind of fish, or even chicken. This was another "first" in the spirit of spicing up the usual dinner menu. This was originally on today's menu as it is something i can easily prepare after work. But i left work early today because i have a headache and can't stand my new job. However that is subject matter for another post!

Yield: 10 filets
Ingredients:
- 10 (4 oz) tilapia filets
- salt and ground black pepper to taste
- 1/3 cup flour
- 1/2 cup flour
- 1 cup buttermilk
- 1 large egg
- 1/2 cup yellow cornmeal
- 2 tbsp Old Bay (or seafood seasoning of your choice)
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- canola (or vegetable) oil for frying
Step 1: Season fillets with salt and pepper. Dust fillets with 1/3 cup flour
Step 2: Beat buttermilk and egg in a bowl until combined. In another bowl, stir together 1/2 cup flour, 1/2 cup yellow cornmeal, seasoning, baking powder and baking soda in another bowl. Dip flour-dusted fillets into egg mixture, then into seasoned flour mixture
Step 3: Heat oil over medium-high heat in a large cast iron skillet (or deep fryer if you prefer to 350 degrees f)
Step 4: Working in batches, fry fillets in hot oil until golden, about 2-3 mins per side based on thickness of fillet. Transfer to a paper towel lined plate to drain. Season immediately with salt after frying and squeeze fresh lemon juice on them.
Enjoy with any side you prefer!
Warning: You may have to deter kittens by feeding them something yummy if they keep trying to get the fish.
