This was such a winner. I love salmon so i have prepared it and eaten it in many different ways. This sweet, tangy recipe with Asian undertones was amazing. We not only used the glaze on the fish, but ended up putting it on the Jasmine rice and steamed broccoli as well.

Servings: 4-6
Ingredients:
- 4 to 6 fresh salmon filets
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 1/4 cup water
- 1 tbsp lemon juice
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- chopped green onion and parsley
- 1/3 cup brown sugar
- salt and ground black pepper to taste
Step 1: Place salmon in shallow, flat dish and set aside. Combine all ingredients except salt and pepper into a medium-large sized bowl. Let the salmon soak in this marinade in the refrigerator, covered, for about 2 hours.
Step 2: Line a broiling pan with foil. Remove salmon from marinade and place in pan, season to taste with salt and pepper. Transfer remaining marinade to a sauce pan.
Step 3: Turn on broiler to low
Step 4: Broil salmon about 6 inches from heat for 5 minutes; brush with marinade. Broil an additional 5-10 minutes, brushing periodically with marinade. Salmon is done when it is no longer bright red and can be flaked with a fork.
Step 5: Meanwhile, cook the remaining marinade over low heat until it thickens and reduces a bit, for about 5-10 minutes. Use this marinade for a dipping sauce, or like we did, pour it over everything on your plate.
